D.O.C. Collio


Straw yellow color with greenish reflections. Lively and very delicate nose with citrus and fresh fruit aromas. Spicy notes (white pepper and ginger) with balsamic and mentholated flavors. In the mouth it is precise, with a good freshness and a marked and evident acid backbone, of pure strength.

Harvest: Manual in box, last week of August.
Elaboration: Light pressing of whole grapes, soft pressing with a yield of the must around 50%. Fermentation with temperature control, maturation in stainless steel tanks and partially in French oak barriques for 8 months. Clarification after assembly. Malolactic fermentation not carried out. Further refinement in the bottle for at least 4 – 5 months.
