Sauvignon San Giovanni

D.O.C. Collio

Sweetly scented bouquet of white flowers, lemon oils and smoke. Full, fat but at the same time very elegant with evident acidity which gives incredible freshness. Very long with notable minerality.

It is completely dry with approximately 14%vol alcohol produced only from natural sugar from grapes.

VINIFICATION
Harvest: Manual in small boxes at the end of August
Elaboration: Whole grapes crushing and soft pressing. Cold clarification just by gravity of only free run juice. Fermentation in oak barrels where wine remains for about eight months. No malolactic fermentation. Bentonite clarification and gentle filtration at the time of bottling.
