Merlot

The intense fragrance of wild and blackberries is contrasted by a nuance of graphite and wet stones. It’s velvety smooth and full-bodied with a dense wave of tart. The flavour is dry, full and mellow with surprising finesse, elegance and length.

It is completely dry with approximately 14% vol. alcohol produced from natural sugar from grapes.

VINIFICATION
Harvest: Manual in small boxes in second half of September.
Elaboration: Destemming and crushing in open wooden vats. Fermentation and maceration for about 20 days with frequent punch downs of the skins and two delestages. Maturation in oak barrels for about 12 months. Malolactic fermentation completely done. Then at least another 24 months of aging in stainless steel and bottle. No finning. Gentle filtration at the time of bottling.
